RECIPE INDEX
If you don't know what a pig pickin is, you didn't grow up in the south!
PIG PICKIN CAKE
1 box yellow cake mix
4 eggs
1/2 cup vegetable oil
1 cup mandarin oranges, juice included
In a large bowl add cake mix, eggs and oil
Mix well
Stir in mandarin oranges
Pour into 3 greased and floured 9 inch pans
Bake at 350 degrees for 20 minutes or until done
cool completely before icing
ICING
1 6oz pkg instant vanilla pudding
1 13.5oz can crushed pineapple, undrained
1 12oz container Cool Whip
Stir vanilla pudding into pineapple and let stand for 5 minutes
Fold in whipped topping
Frost cooled cake and store in refrigerator
