BLUEBERRY MUFFINS
BLEND:
1/2 cup butter
1/2 cup sugar
ADD:
2 eggs, one at a time
1 tbs lemon juice
1 tbs grated lemon rind
SIFT THEN ADD:
1 cup flour
1 tsp baking powder
1 tsp salt
Beat until creamy
Fold in 3/4 cup fresh blueberries
pour into greased muffin pan
Bake at 350 degrees for 25 minutes
